Dinner

All of this was pre-cooked for more meals later. Matt baked a bunch of chicken breasts & sweet potato ahead of time & cooked quinoa. All I did was warm it all up in a pan! It’s not a chef’s recipe, just simple & quick!

1. Brussels sprouts sautéed in olive oil.
2. Grilled chicken breast cut in half.
3. Sweet potato patty which is just sweet potato mixed with quinoa (both were cooked in advance) w/green chile & pattied up like a burger, then grilled.
4. Since the chicken was just plain, I dipped the chicken in a mix of spicy Dijon mustard mixed w/a lil Greek yogurt.
