Recipes for fun and healthy food

Food to Go!

At a State baseball tournament and there’s no healthy food in sight, but I carry low sodium tuna in my purse (as well as Shakeology, almonds and an apple) just for these situations.

A local sub shop put the veggies together for me (if you ask nicely, most places will make a non-menu meal). And they of course had lunch meat but that is SO high in sodium. I hate feeling so bloated from high sodium foods, not to mention it’s unhealthy. Salad dressing was vinegar and oil.

Hot Chocolate Oatmeal

Hot Chocolate Oatmeal with superfoods added?!  Um, yes please!!! Perfect for a BUSY cold rainy day!!

I’m sure this would work too with old fashioned oats, steel cut oats, etc. Cooking Shakeology diminishes nutrient content, but adding it to warm oatmeal is a go!! This is 2 packages Kashi all-natural Instant Oatmeal (honey & cinnamon flavor), add water until it’s VERY soup-like, heat 1 minute until hot and add 1/2 scoop chocolate Shakeology.

If it’s too thick, add more hot water. DELISH! 24g protein & 380 calories. With half banana and sliced almond toppings, more like 450 calories 🙂

Toasted English Muffin

You like?! It’s a *toasted* Ezekiel English muffin (not all stores carry them but check your freezer section…they’re the BEST), with low sodium tuna mixed with nonfat plain Greek yogurt and spicy mustard, avocado slices, romaine lettuce and tomato!

Hollowbacks and Shakeology

Jen Delvaux and I had a choice …go out to dinner? Or have Shakeology and practice hollowbacks? Shakeology and hollowbacks… HANDS DOWN (literally).

Get Back in the Game

How do you stay motivated? I just COMMIT to staying in the game …no matter what happens. Not gonna lie.. I sucked in REALLY hard for this pic this morning! I’ve just come back from traveling AND a birthday week which was showered with goodies and chocolate…and even MORE when I got home to my husband and son. Not complaining…I feel sooo blessed! I worked out all week but definitely ate out and splurged more than usual. To me, it’s not called “cheating” it’s just life. I enjoy myself for *special* occasions, I accept the consequences of feeling bloated and sluggish… and I get back in the game!! Now off to Turbo!

Ezekiel Wraps

Have you found Ezekiel wraps in your grocery store freezer section yet? Wheat makes me bloated and I don’t do white bread, so I love these!  I didn’t have chicken already cooked up and I like it to be high protein, so I quickly scrambled 100% liquid egg whites (5 servings, 125 calories and 25g protein) to use as the base with spinach mixed in, then topped with cherry tomatoes, olives, salsa, and Reduced Fat sharp cheddar. It’s all on an Ezekiel wrap which I made a little crunchy by putting it on stove with cooking spray for a few minutes first. It’s 400 calories and 35g protein.

Choose Your Splurge

When I’m at the airport, I’d LOVE to have a Starbucks and a reduced fat muffin or one of those BIG turkey sandwiches on that THICK bread. But lets be honest, those are hardly clean eats. I’d rather save my splurges for the special dinners out and the trips to get frozen yogurt with the family. Everyday there are temptations.Make a conscious choice and move on:)

EAT to Build Muscle

Busy busy morning and didn’t have time for my mid morning egg whites so I included a “good carb” and had this as LUNCH! My usual egg whites with spinach, red and yellow peppers, RF feta, salsa on top… With a side of sweet potatoes! This was 400 calories and HIGH protein! You need to EAT to build fat-burning muscles!! You just have to avoid the other junk that will tempt you, 90% of the time.

Turkey Burger with Blue Cheese

Turkey burger … again?! This was actually my lunch but maybe I’m in time for dinner inspiration 🙂 I don’t use a special recipe for my turkey burgers,… Again, we just patty up a bunch a couple times a week and put them in salads, wraps, etc.

This is on an Ezekiel bun with Spinach, nonfat plain greek yogurt as my condiment and Blue Cheese crumbles (higher in fat and calories than my RF feta, BUT lower in sodium) You like?!?!

Blueberries and Yogurt

Do you like the taste of nonfat plain Greek yogurt by itself?? If I’m having it as a condiment, as a sour cream substitute, then I like it as is because it’s sour like sour cream. BUT… With fruit or by itself, I add vanilla stevia drops ..then it’s just like Vanilla yogurt without all the sugar that traditional yogurts have. This nonfat plain greek yogurt has 18g of protein. I like Chobani too! I got the Stevia drops at a local health food store but plain stevia packets would sweeten it too
